This is far from traditional but works so well, with the sweet potatoes caramelising and adding sweetness, and the oranges adding another tone altogether. The best thing is that the actual preparation time is only 10 minutes; then cooking for 5–6 hours will produce a real treat.

Ingredients

  • 3 tbsp vegetable oil
  • 1 oxtail, cut into thick pieces (about 1.5kg)
  • 2 large sweet potatoes

Method

Preheat your oven to 220°C/200°C fan/gas mark 7.

Heat the oil in a large ovenproof pan over a high heat and place the oxtail pieces in it. Season generously with salt and pepper and cook for <
