We call this dish sfiha as it is very loosely connected to the traditional Arabic pizza-like dish, in that it consists of a savoury topping (in this case mushroom and cumin) on a rich, yeasted dough. The curd cheese is easy to make yourself but if you can’t be bothered, use ricotta instead. If you only cook one dish from this book, make it this one – it’s truly wonderful.
