Traditional maamool cookies are usually filled with dates or walnuts and making them is very labour-intensive. It is all about the lovely patterns created by tiny pincers, which takes much practice. I have never really had the time to learn to make these patterns (I still hope a granny somewhere will take me in and teach me her art), so I have settled for a version which is simpler-looking but no less fantastic to eat.
