We always have this on the menu and probably always will. As chefs from a hot country working in hot kitchens, we have developed a palate for thirst-quenchers, and this one is up there with the best of them. We have been asked for the recipe so many times, but until now had obliged only once. As a result, we know for a fact that this has been prepared and enjoyed in Dubai as part of an Iftoor meal, the Ramadan fast-breaking dinner at the end of the day.
