This excellent tea, like many good things, was born of a mistake. One day, when roasting plums to serve with marzipan cake, a certain Italian pastry chef forgot them in the oven for far too long. I hate wastage, especially of amazing plums and vanilla, so I came up with this iced tea. It is truthfully worth overcooking plums for.

Ingredients

  • 6–8 soft red plums (about 400g)
  • 1 vanilla pod
  • 200 g sugar

Method

Preheat the oven to 220°C/200°C fan/gas mark 7.

Cut each plum into 6–8 wedges, discarding the stone, and place in a roasting tin. Slit the vanilla pod all the way down its length and scrape the seeds out (I use the back of the knife that I slit it with). Put the seeds and the p
