To make the oil

Heat a pan of salted water until boiling then add the basil leaves. Blanch for 20 seconds only, then refresh immediately under cold running water.

Pat the leaves dry, place in a food processor with the oil and blitz on a high speed for a few minutes until the oil turns a vibrant green.
