  • 1 whole John Dory, roughly 1.5 kg, head removed
  • 4 sticks lemongrass

Method

Preheat the oven to 160°C/325°F/gas mark 3. Clean and wipe the John Dory and set aside.

Finely slice the lemongrass, ginger, chilli, shallots, fennel and celery and spread on a baking tray; scatter the coriander stalks over the vegetables.
