Method

To make the dressing

In a bowl whisk together the Chardonnay vinegar, rice wine, lemon juice, shallot and chillies with a good seasoning of salt and freshly ground black pepper. While continuing to whisk, slowly add the olive oil. Just before serving, stir in the snipped chives and check the seasoning.
