For the Curry Sauce

  • 40 g salted butter
  • 60 g onions, peeled, sliced
  • 300


Melt the butter in a saucepan, add the onions and sweat over a low heat to soften. Add the pineapple, banana and apple and cook gently for 5 minutes. Stir in the curry powder and coconut, and pour in the chicken stock and coconut milk. Bring to the boil and simmer for 20 minutes.

Pass the curry sauce through a fine sieve, season with salt and freshly ground pepper, and set aside covered
