Method

  1. Heat the oil in a saucepan over medium-high heat and add the shallots and ½ teaspoon salt. Fry the shallots for 2 minutes, stirring regularly, then add the carrot, celery and garlic. Fry for a few minutes until the vegetables are soft, then add the thyme and bay leaf and cook
