  • 2 dozen unopened fresh oysters
  • 150 ml (5 fl oz) cabernet merlot vinegar

Method

  1. Open the oysters and arrange them in a dish on a bed of crushed ice.
  2. For the mignonette sauce, combine the vinegar, shallots and a little white pepper in a small serving bowl. Serve the sauce separately so your guests can dress the oysters themselves.
