  • 375 ml (12½ fl oz/ cups) Champagne or sparkling wine

Method

  1. Pour the Champagne into a plastic container and freeze for a minimum of 5 hours, or until frozen hard. Use a fork to scrape the Champagne granita into fine crystals. Return to the freezer.
  2. Open the oysters and arrange them in a dish on a bed of crushed ice.
