Anything gin and I am there! This is a neat way to incorporate this great drink into a delicious savoury starter. I used Four Pillars Navy Strength Gin here; however, you can use any gin you like, although a better quality gin will give a better outcome. You could also experiment a little here by using a flavoured gin.

  1. To make the curing mixture for the trout, combine the salt, sugar and crushed juniper in a bowl. Stir in the gin and set aside.
  2. Lay a length of plastic wrap on the work surface. The plastic needs to be 50 per cent longer than the length of the fish. Lay down a second length, overlapping the two sheets to ensure the plastic is strong and wide enough. Spoon half
