These wee scotch eggs are awesome as a canape or even as a starter, and are also great with a chilled glass of sparkling.

Ingredients

  • 12 quail eggs
  • 450 g (1 lb) sausage meat
  • 1

Method

  1. Using a slotted spoon, drop the quail eggs into a pan of boiling water and cook for 2 minutes. Remove the eggs and plunge into a bowl of iced water. Once cool, peel the eggs and set aside.
  2. Put the sausage meat and thyme and garlic in a bowl. Season with salt and pepper, mix well with clean hands, then divide the meat mixture into twelve equal portions.
