Everyone loves this one - it’s both naughty and nice! With its creamy, cheesy sauce, it’s the perfect accompaniment to Beef Wellington or any roast.

Ingredients

  • 1 large cauliflower, trimmed and cut into even-sized florets
  • 50 g ( oz) unsalted butter

Method

  1. Bring a large saucepan of water to the boil, season well with salt and blanch the cauliflower for 3 minutes. Drain, refresh the cauliflower in cold water and then drain again. Pour the blanched florets into a large baking dish.
  2. Preheat the oven to 200°C (400°F)
