This is such a beautiful gift for friends and family, and it’s also a handy component in desserts such as your triumphant Christmas trifle, in crumbles or simply served on its own with vanilla ice cream. It’s worthwhile investing in a cherry pitter to make this job a quick one.

  • 30 g (1 oz) pectin

Method

  1. Mix the pectin with the sugar and add this to a large saucepan with the water and vanilla seeds. Whisk to combine well.
  2. Place the pan over medium heat and bring the syrup to the boil, whisking constantly. Reduce the heat to low and simmer for 2 minutes, or until the syrup starts to thicken.
  3. Add the pitted cherries and stir gently until the syrup comes
