Super simple and delicious, these rums balls are made with leftover sponge - I make them with the brownie scraps from the Christmas trifle. They’re called rum balls, but you can use any alcoholic spirit to give these some festive cheer.

  1. Line two trays with baking paper and set aside. Put the frozen chocolate brownie scraps into a blender and quickly pulse to form crumbs. If you do this for too long, the sponge will defrost and go mushy.
  2. Pour the cold blitzed crumbs into a bowl with the cookie crumbs, milk chocolate, cocoa nibs, cocoa powder and rum. Mix the contents of the bowl with your finge
