What we know as curry powder is a mixture of spices used to flavour Indian dishes that we have come to call curries. Perhaps the word comes from the Tamil word for stew, kari, or perhaps not. Regardless, food in India has been redolent of alluring spices since the pre-Aryan period, though until the sixteenth century black pepper fired up the food rather than the hot chillies we now associate with Asian cookery.
