Spicy Peanut Sauce has, in recent years, become almost as common as ketchup. Usually served with kebabs, when it is well made it is a bright balance of hot, sweet and savoury flavours all bound up in the smooth richness of ground peanuts.
Authentically this sauce is prepared using shelled, roasted peanuts pounded to a paste with a mortar and pestle. Peanut butter is a short cut but with enough forceful seasoning does not detract from the final result.
