Used as a condiment, a fiery salad dressing, or as an ingredient, this gives its distinctive flavour to everything it touches. The ripe red chillies give a sweet flavour; if unavailable, substitute fresh green chillies or a purchased red chilli paste.

Cambodian Chilli-Lime Sauce is particularly good with quickly steamed squid that has been tossed with a little chopped lemon grass; sprinkle with chopped coriander and enjoy as a salad.
