A bowl of this vivid condiment adorns tables throughout Martinique and similar sauces are served throughout the other isles. Sliced marinated and grilled pork or goat, seafood and stews, roasted fish — all are enhanced by this salsa. Try it also with Mexican dishes: any sort of taco, or rolled up in soft flour or corn tortillas.
Besides being delicious, this salsa is visually pleasing: a confetti of red and green.
