Throughout the Middle East delicious salads are prepared by chopping everything into equal-sized pieces and dressing the mixture with olive oil and vinegar.

Enjoy with crusty bread or soft naan for scooping it up with, and follow with Lamb and Aubergine Tajine.

Ingredients

  • 1 large cucumber, peeled if liked, and diced
  • 4 tomatoes, diced
  • 2 sweet red peppers, diced

Method

  1. Combine all the ingredients and enjoy immediately.
