Tahini is a creamy beige sauce prepared from ground sesame seeds. It may be purchased in tins or jars in Middle Eastern delicatessens, healthfood shops and some supermarkets. Seasoned with garlic, chillies and lots of lemon it is favoured throughout the Middle East, slathered over pita bread stuffed with felafel (chickpea croquettes) or shreds of grilled meats.
