Boran was a Persian princess who married the son of the Caliph Harun al-Rashid, the star of so many Arabian Nights adventures. Her wedding was spectacular, with feasting lasting for weeks. Could this explain why in modern-day Iran many of the vegetable and yogurt appetizers are known as borani?

Regardless of the origin of the name, this spinach and yogurt dish is redolent with both musky and sweet spices, complementing the slightly tart taste of the spinach.
