Raw vegetables are eaten in great abundance in Thailand, often presented garnished with elaborately carved vegetables and fruit.
This salad is rather less elaborate, a very simple, very spicy dish - great for a picnic or to accompany any food cooked on an open fire. The crisp shreds of cabbage are combined with a hot-sweet-sour dressing, the crunch of peanuts, and the freshness of diced cucumber, carrot and sweet pepper.
