Deep-frying prawns in their shells seals in the juices and results in very succulent flesh. They’re not at all greasy, since the shells protect them from the hot-oil bath. They are, however, rather messy; be sure to provide bowls for the empty shells. There is something about food that requires a bit of work: shells to remove, fingers getting into the act. It breaks down inhibitions and can encourage informal, warm socializing.
