Horef is roughly translated as ‘hot pepper’. This dish of simmered peppers, chillies and tomatoes is served as an appetizer, salad or relish. Spread it on bread or eat it with roast chicken and pilaf; delicious, too, in a sandwich with cumin-spiced meatballs.


  • 2 green peppers, stemmed, seeded and sliced
  • 2 mild large chillies, or 1 extra green pepper plus an extra hot chilli


  1. Lightly sauté the peppers, chillies and garlic in the olive oil until softened. Add the tomatoes and curry powder.
  2. Simmer until the mixture is thick and the vegetables tender. Season with lemon juice and salt.
