There scarcely seems to be anything new to say about hummous, as it has become nearly a staple in our kitchens, as easily available as bread, eggs and milk. Good hummous is delicious combined with other foods: try spreading it thickly on to crusty French bread and topping it with chunks of spicy browned Italian sausage and coriander leaves, or serving it with marinated and grilled swordfish, drizzled with tahini, and garnished with chopped vegetable salad and hot peppers.
