The filling in these delicate dumplings is spicy and meaty, redolent of curry with a whiff of lavender and ginger. The cool, minted yogurt blankets the rich dumplings, and a sprinkling of fried garlic gives complexity and a contrast of textures as well as flavours.
Golden-fried garlic is eaten often in many parts of the Middle East, forked into pilaf, simmered with lamb, or dipped into with soft flatbreads.
