This is a variation of a dish popular in Northern China. Usually made with chopped pork, it is not unlike spaghetti Bolognese. It’s even better, I’ve found, if tofu takes the place of meat for a welcome lightness. The sauce is sweet and spicy; the cucumber and coriander add a refreshing taste, and the peanut garnish is a crunchy accent to the bland noodles.
