Translucent, chewy mung bean noodles are stir-fried with a julienne of carrots and courgettes, then tossed with a sauce pungent from hot bean paste. This is as delicious at room temperature as it is hot, and makes a delightful dish for a summer supper. I often serve it as part of a salad buffet or accompanying a simple but interesting sandwich.
