There are many variations of this vegetable platter, each with its own distinctive flavours indigenous to its region. In West Java it is known as lotek, and is accompanied by rice steamed in palm fronds. Central Java’s sweet tooth is satisfied by the large amount of sugar in its accompanying peanut sauce. In Bali, where flavours are spicy and sultry, the peanut dressing is fired up with garlic, ginger, turmeric, laos, bay leaf and lots and lots of hot chilli.
