Okra - lady’s fingers - is one of those distinctive vegetables that elicit strong reactions. It has a unique flavour and consistency (like a viscous green bean) that is welcome in dishes like gumbo, but can put potential diners off if they’re not expecting it. Bahmi is a good way of introducing anybody to okra because the sauce is so delicious it eases you into enjoying the vegetable. Serve as an accompaniment for duck or Kofta Kabob, along with rice and a fresh chutney or chilli relish, or
