Many hot cuisines simmer hard-boiled eggs in a rich spicy sauce. Lamb and Aubergine Tajine or Rendang are both delicious examples, as is this Egg Curry. It makes a lovely dish for a summer lunch or supper. This is the first curried dish I ever tasted, served to me long ago in Jerusalem by new acquaintances who seemed at the time the most sophisticated people I had ever met. Egg curry remains a favourite; serve with Ethiopian
