Tomato-Peanut Sauce is typical of African flavours, here combined with leafy spinach and juicy clams in their shells. When the shells pop open their juices mingle with the spinach-peanut mixture.

This is an interesting dish to serve alongside Couscous Fassi, or Rasta Pasta.
