I’ve always adored basil in all its traditional guises - in pesto, with sun-dried tomatoes, as a pizza topping, or in soupe au pistou. In Thai food, however, it shows a different dimension - as in this dish, where the herb is paired with its cousin mint. The basil echoes the mint’s sweetness but offers depth of flavour. This simple stir-fry has the bite and sweet-sour balance representative of Thai food.
