Minced meat is strongly seasoned with aromatic spices and formed into patties, known variously as kofta, kefta, kufta or kefthedthes, depending on the geographical location. Either lamb or beef may be used, and the patties may be fried, grilled, or simmered in a rich, fragrant sauce.
