Calzone is simply pizza dough folded into a turnover shape then baked. The filling is inside instead of on top.

Anything can go inside a calzone. Goat cheese is particularly nice, a tangy and creamy presence with just a whiff of the barnyard, together with a jolt of only slightly hot green chilli. Adding thyme leaves to the dough is delicious and unusual.
