Thin pancake-like flatbreads of ground fresh com, enlivened with hot chillies and seasoned with a little cumin. Serve with fresh tomato and chilli condiment or salsa of choice. Like similar breads - tortillas, naan, chapattis, etc - they are lovely with simple roasted or grilled meats or seafood.

  • 700 g/1 lb 9 oz sweetcorn, fresh or frozen<

Method

  1. Purée half the corn and leave the other half in whole kernels. Combine the puréed corn with the kernels, then mix with 225g/8 oz flour, chillies, salt, cumin seeds and vegetable oil.
  2. Knead the mixture until it forms a heavy, sticky dough, adding more flour if needed.
