Empanadas are individual pastries enjoyed throughout Latin America. They are filled with meat combined with spices and chillies.

Though they are traditionally made with a flaky shortcrust I find that using filo is much easier and deliciously brittle-crisp around the spicy filling.

I love filo pastry - once you get the feel of it, it becomes terribly simple to work with. Plus it keeps in the freezer for instant availability. The filling in this recipe is called Picadillo. It
