Courgettes are economical and abundantly available. A quick stir in the wok and this easy side vegetable dish can be prepared in minutes, or it can be a delicious vegetarian treat. Here I add fresh chillies to give them a lift. These vegetables can be watery depending on size; I recommend the smaller ones.

Ingredients
