Sweet and Sour Onions

The wok is ideal for preparing this delicious vegetable recipe. These sweet and sour onions are a simple food that can proudly complement any main course. The onions are stir-fried in the wok, then allowed to cool in the sauce. The result is a delicious relish for any meats or fish. Or it can be served as part of a tasty vegetarian meal. Try to get the red onions which are sometimes a bit sweeter.


  • 450 g (1 lb) red or yellow onions
  • 1 tablespoongroundnut oil
  • 2 tablespoons coarsely chopped garlic
  • ½ teaspoon salt
  • 1 tablespoondark soy sauce
  • 2 tablespoons black or red rice vinegar
  • 2 tablespoons sugar


Cut the onions into 2.5-cm (1-in) thick slices.

Heat a wok or large frying-pan over a high heat until it is hot. Add the oil and, when it is very hot and slightly smoking, add the garlic and stir-fry for 20 seconds, then add the salt and onions. Continue to stir-fry for 1 minute. Now add t he soy sauce, vinegar and sugar and continue to cook for 3 minutes, until it is well mixed. Turn the mixture on to a platter, allow it to cool and then chill for at least 1 hour so that it is well chilled before serving.
