The watermelon is the fruit of a vine that originated in Africa. How it made its way to Asia is uncertain but there is no doubt about the popularity of its sweetness, coolness and rich colours. Watermelon is the perfect dessert for Asian meals, which are so often spicy and aromatic.
Start by making the syrup. Bring the water and sugar to a boil in a wok over a high heat. When the sugar has melted, add the lime juice. Allow the syrup mixture to cool thoroughly.
