KATHY: Nanking’s onion cakes with peanut sauce have been one of our most popular vegetarian appetizers for thirty years and counting. Onion cakes, called scallion pancakes at many Chinese restaurants, are flaky pancakes made with flour, water, oil, and scallions. The texture, size, and flavor vary depending on what region of China you are from: Northern-style pancakes are thinner and chewier, oftentimes used as a vessel to wrap around proteins and vegetables, almost like a
