KATHY: Là jiàng directly translates to hot sauce, but là jiàng miàn is so much more than just hot sauce with noodles. First of all, là jiàng is actually hot sauce on steroids, loaded with delicious bits of pork, marinated tofu, dried shrimp, and peanuts. You fry these ingredients in oil until they’re dry and crisp, then simmer them in broad bean sauce, chili sauce, hoisin sauce, and MSG. The end result has pops of sweet, savory, salty, and spicy.
