If there is a secret to French cooking, it is to be found in crème fraîche. Never be without it.


  • 1 (8-ounce) carton whipping cream
  • 3 tablespoons commercial yoghurt


  1. Pour whipping cream into a jar. Add yoghurt. Mix well, then set into a pilot-heated oven for about 8 hours, or overnight. Next morning stir and refrigerate. Once cold, it will thicken (see notes). If your oven has no pilot light, make crème fraîche during the day and keep warm in water maintained at about 100 degrees.
