Ingredients

  • 2 cups water
  • 2 cups white wine
  • Chunk of butter

Method

Put all ingredients but sherry and honey into large flat skillet. Simmer 10 minutes. Add sherry and honey, then the fish.

Judge poaching time by the thickness of the particular fish. As a rule of thumb, a 1-inch fillet or steak takes about 8 minutes to poach.
