Simmer 4 sliced shallots in ½ cup white wine and 2 tablespoons vinegar. Reduce liquid to nothing. Add Demi-glace, ¼ cup tomato paste, and dash of cayenne. Simmer 20 minutes. Strain, and adjust seasonings.

Finish with tablespoon lemon juice, Cognac and Madeira from Demi-glace recipe, and swirl in chunk of butter. Sprinkle sauced foods with chopped parsley. For grilled meats and game.
