Lyonnaise

Method

Sauté ½ cup minced onions in chunk of butter. Add ¼ cup each white wine and vinegar. Reduce liquid to nothing. Add Demi-glace. Simmer 20 minutes. Add Cognac and Madeira from Demi-glace recipe. Adjust seasonings. Swirl in chunk of butter. For grilled and sautéed meats.
