Substitute Hollandaise sauce for the Béarnaise. Instead of artichoke bottoms place poached eggs in sautéed tomato halves, then set on a bed of buttered cooked spinach.
When poached eggs are set on a ham slice and then on a toasted English muffin and topped with red and yellow Hollandaise you’ll have Eggs Benedict, in color.
